Rene and I love sushi and good sushi is hard to find. Kalamazoo is no exception but we went out on a limb to try a little place called Tokyo Express. Tokyo express is a small place and looks like it would not be anything special but they have a great menu selection and the sushi chefs are young and do a great job on both cutting and presentation. I (Justin) started off with my favorite, seaweed salad and a Japanese soda. The seaweed salad was fresh and crisp which is important. Soggy seaweed salad is not good!
Next was the sushi and it was great. I had the Green Dragon roll which was a spicy salmon and spicy tuna wrapped with seaweed and topped with avocado. The avocado added a great cooling affect to the spicy tuna and salmon. I also had 2 types of Tobiko (Japanese word for the flying fish roe used to create certain types of sushi) and Ika (squid). The Tobiko was different for me because it was the fist time I have had it, that being said it was awesome. The green one was wasabi infused and packed a hidden punch, spicy and salty was a good mix and the rice at the bottom added a cooling affect. The black one was good but more on the normal side, salty but good. I don't know why I always order squid because I have yet to like it but every time I see it on the menu I get it. This was not exception, don't get me wrong it was prepared well and I am sure that fans of Squid would love it but it was just not for me. The squid was fresh and laid over rice and then lightly toasted with a torch, it was made well I am just not a fan of the texture.
